Your most useful tool with kveik

 

Most brewing yeast gives you an arrow temperature window and punishes you for leaving it. Kveik gives you twenty-five degrees. All four of our strains work anywhere from 12 to 40 °C(54-104 °F), and the beer is genuinely different at each end. That makes temperature the first thing worth learning about Kveik, and the single decision that changes the beer most.

12 to 20 °C (54-68 °F). Clean and crisp. The yeast stays in the background and lets the malt and the hops lead. Fermentation is slower here, closer to what you are used to, but the beer comes out clean. Expect the fermentation to reach final gravity in 5-10 days.

20 to 25 °C (68-77 °F). Lightlyfruity ales. Mild ester character and still restrained. A good starting point if you have not brewed with Kveik before and want to see what it does without committing the whole beer to it. Final gravity is usually reached in 3-5 days.

25 to 32 °C (77-90 °F). Mediumfruity ales. Fruit  becomes a clear part of the profile, and the fermentation gets quick. Usually our kveik cultures reach roughly 30 % attenuation within twelve hours in this range, and most are at final gravity in two to three days.

32 to 40 °C (90-104 °F). FruityIPAs. The full estester expression and the shortest tank time. This is where kveik earns its reputation, and where it pairs best with modern hops. Final gravity can be reached within 1-3 days.

The thing to understand is that withKveik, hot does not mean harsh. Heat normally brings solvent and astringent character with it. Kveik does not develop that, even at the top of its range.

Kveik also tolerates what most yeast will not: temperature fluctuations, free rise, and no temperature control at all. Pitch warm, let the fermentation run where it wants, and you still get clean beer. That is a real advantage if you do not have a glycol chiller, and it is how these yeasts were used on the farms in the first place. The only thing to keep in mind is that where the temperature lands is what decides the flavour, so if you want the same beer twice, know where your fermentation runs.

So work backwards. Decide what youwant the beer to taste like, then pick the temperature that gets you there.
